Ingredients

QUESTIFIED PUDDING CUPS (EARTH DAY EDITION)

Method

  1. In a bowl of a stand mixer, beat together the milk and protein powder.
  2. Add in the pudding mix and beat on low-medium speed for 5 minutes and the pudding has thickened. Cover and chill.
  3. Preheat the oven to 350 F and prepare a baking sheet with parchment paper.
  4. Unwrap the Quest Bars and place them beside each other on a piece of parchment paper.
  5. Microwave for 10 seconds and then cover with another piece of parchment paper and use a rolling pin to roll out into a thin disc.
  6. Use a cactus cookie cutter to cut out 5 cookies. Place them on the baking sheet along with any leftover scraps and bake for 6-7 minutes. Let cool.
  7. Melt the white chocolate and coconut oil together until smooth. Stir in the green food coloring.
  8. Dip each cactus in the white chocolate. Chill until chocolate is solid.
  9. Divide the pudding between 5 small bowls. Crumble the cookie scraps over each pudding bowl and top with a cookie cactus. Serve.
