Ingredients

BUTTERNUT SQUASH TORTILLA CHIP PROTEIN SOUP

  • 2 tbsp olive oil, separated
  • 1 medium butternut squash, peeled and cubed
  • 1 white onion, diced
  • 1 clove garlic, diced
  • 2 cups chicken broth
  • ½ tsp salt
  • ¼ tsp black pepper
  • 1 tsp sage
  • ⅓ cup heavy cream
  • 2 Bags Quest Chili Lime Tortilla Chips

Method

  1. Preheat the oven to 425 F and prepare a pan with parchment paper.
  2. Drizzle the squash with 1 tablespoon of olive oil. Cook for 30-40 minutes and tender.
  3. Meanwhile, add the remaining 1 tablespoon of olive oil to a pot over medium heat.
  4. Once hot, add the onion and stir. Cook until tender and golden, about 4-5 minutes.
  5. Add in the garlic and cook for 1-2 minutes. Transfer to a blender along with the cooked squash, salt, pepper, sage and 1 cup of broth.
  6. Blend until smooth and then return to the pot. Stir in the remaining broth and heavy cream and simmer for 5 minutes before transferring to bowls and serving with Quest Chili Lime Tortilla Chips on top.
