Ingredients

MINI PEANUT BUTTER CUP POPCORN BALLS

  • ½ cup peanut butter, natural
  • ⅓ cup sugar free honey syrup
  • 2 tbsp butter
  • 8 cups popcorn, popped
  • 8 Quest Mini Peanut Butter Cups
  • ¼ cup sugar free chocolate chips
  • 1 tsp coconut oil

Method

  1. Place the peanut butter, honey and butter into a large pot over medium heat. Stir until melted and smooth.
  2. Turn off heat and add in the popcorn. Gently mix the popcorn from the bottom up to evenly distribute the mixture.
  3. Once all the popcorn is coated, add in the chopped mini peanut butter cups and use ¼ measuring cup or ice cream scooper to make 16 evenly sized balls.
  4. Use your hands to pack the popcorn and form into balls.
  5. Melt the chocolate and coconut oil together in a microwave safe dish until smooth and drizzle over the popcorn balls.
  6. Chill for 20 minutes before serving.
