Ingredients

MOCHA ICED COFFEE CUPCAKES

Frosting:

Topping:

  • 10 coffee beans
  • Cocoa powder for dusting

Method

  1. Preheat the oven to 350 F and prepare a muffin pan with 10 cupcake liners.
  2. In a mixing bowl, stir together the almond flour, cocoa powder, sweetener, protein powder, baking powder and salt.
  3. In another bowl, whisk together the Quest Mocha Latte Iced Coffee, eggs, ricotta cheese and oil until smooth.
  4. Add the dry ingredients to the wet and combine. Spoon the mixture evenly between the 10 liners.
  5. Bake the cupcakes for 16-18 minutes and cooked through. Let cool.
  6. Stir together the frosting ingredients and use a butter knife to spread frosting over the top of each cupcake.
  7. Dust with cocoa powder and top with a coffee bean.
