Method for making a Fresh Potato and Spinach Salad that you could use in a short video:
Ingredients:
Baby Potatoes: 2 cups, boiled and halved
Fresh Spinach: 2 cups, washed and dried
Red Onion: 1 small, thinly sliced
Cherry Tomatoes: 1 cup, halved
Olive Oil: 2 tablespoons
Lemon Juice: 1 tablespoon
Dijon Mustard: 1 teaspoon
Salt and Pepper: To taste
Fresh Herbs: Parsley or dill, chopped (optional)
Steps:
Boil Potatoes:
Boil baby potatoes until tender, then drain and let them cool slightly. Halve the potatoes.
Mix Dressing:
In a small bowl, whisk together olive oil, lemon juice, Dijon mustard, salt, and pepper.
Assemble Salad:
