Ingredients

MINI STUFFED BELL PEPPERS

  • 8 mini bell peppers
  • 5 tbsp cream cheese, room temperature
  • ⅓ cup sharp cheddar cheese, shredded
  • 1 bag Quest Cheddar Blast Cheese Crackers, crushed
  • ½ tsp garlic powder
  • Salt and pepper to taste

Method

  1. Pre-heat the oven to 350 F and prepare a baking sheet with parchment paper.
  2. Cut the bell peppers in half lengthwise and remove seeds.
  3. In a bowl, stir together the cream cheese, cheddar cheese, cheese crackers, garlic powder, salt and pepper.
  4. Stuff each bell pepper half with the cream cheese mixture.
  5. Bake the stuffed peppers for 15-20 minutes and tender. Serve immediately.
