Ingredients
S’MORES COOKIE CUPS

- 2 Quest S’mores Bars
- 12 tbsp low calorie ice cream
- 2 tbsp sugar free chocolate chips
- ½ tsp coconut oil
Method
- Preheat the oven to 350 F and prepare a mini muffin tin with non-stick spray.
- Place the unwrapped bars beside each other on a piece of parchment paper and microwave for 6 seconds.
- Use a rolling pin to roll out the bars until they are roughly ⅛” in thickness. Use a 2” cookie cutter to make 8 circles.
- Place the flattened bar circles into the center of the muffin cavities and use a spoon to press them down to make a cup.
- Bake the cups for 5 minutes. Let cool.
- Melt the chocolate and coconut oil together in the microwave until smooth.
- Fill each cup with ice cream using a 1.5” cookie scooper. Drizzle with chocolate and serve.
