Ingredients

QUESTIFIED TORTILLA SOUP

  • 2 tbsp olive oil
  • 1 yellow onion, chopped
  • 1 large zucchini or two small, chopped
  • 4 cloves garlic, minced
  • Juice from 2 limes
  • 2 tsp garlic powder
  • 2 tsp oregano
  • 2 tsp cumin
  • 1 tsp coriander
  • 1 tsp salt
  • ½ tsp pepper
  • 1 15oz can fire roasted tomatoes
  • 1 15oz can crushed tomatoes
  • 32 oz chicken broth
  • 1 cup water
  • 3 cups rotisserie chicken, shredded
  • 4 Bags Quest Tortilla Chips for topping
  • Cilantro for topping, chopped
  • 2 avocados for topping, sliced
  • peppers if desired for topping

Method

  1. In a large heavy bottom pot, turn on medium heat. Once hot, add the olive oil and onion and zucchini and cook until translucent.
  2. Add in the garlic and spices and cook for 2 minutes and browned.
  3. Add in the tomatoes, chicken broth, water, lime juice followed by the chicken. Bring to a boil and then reduce to a simmer and then let cook for 20 minutes.
  4. Ladle the soup into a serving bowl and top with Quest Chips, fresh cilantro and avocado slices.
  5. Top with hot peppers if desired.
