Ingredients

QUESTIFIED IRISH SODA BREAD

  • 1 ½ cups almond flour
  • 1 scoop Quest Multi-Purpose Protein
  • ¼ cup coconut flour
  • 1 tbsp zero calorie sweetener
  • 3 tbsp ground flax meal
  • 1 tsp baking soda
  • 1 tsp dried rosemary
  • ¼ tsp salt
  • 2 eggs
  • ¼ cup almond milk
  • 2 tsp distilled white vinegar

Method

  1. Preheat the oven to 350 F and prepare a baking sheet with parchment paper.
  2. In a large mixing bowl, stir together the almond flour, coconut flour, protein powder, sweetener, ground flax, baking soda and salt.
  3. In another bowl, whisk together the eggs, milk and vinegar until smooth.
  4. Add the dry ingredients to the wet and stir using a rubber spatula until a dough comes together.
  5. Press the dough into a mound and place it on the baking sheet.
  6. Use a knife to score a “x” into the top of the dough. Bake for 25-28 minutes and golden brown.
