At Quest we love to take high sugar, high carbs foods and put our own spin on them. This recipe is no exception. Each of these Peanut Butter Donuts have about 1g of sugar a piece, so while you may be tempted to eat them all to yourself, we highly suggest sharing them with others. Ingredients
PEANUT BUTTER CUP DONUTS
- ⅓ cup almond flour
- 2 tbsp zero calorie sweetener
- 1 scoop Quest Vanilla Milkshake Protein Powder
- ⅛ tsp salt
- 1 tsp baking powder
- 1 egg
- 1 tbsp natural peanut butter
- 1 tbsp almond milk
- 1 tsp vanilla extract
Icing
Method
- Preheat the oven to 350 F and prepare a mini donut pan with non-stick spray.
- In a bowl, stir together the almond flour, sweetener, salt and baking powder.
- In another bowl, whisk together the egg, peanut butter, almond milk and vanilla.
- Add the wet ingredients to the dry and stir until combined.
- Distribute the batter between 5 donut molds.
- Bake for 8-10 minutes and a toothpick comes out clean. Let cool.
- In a microwave safe bowl, melt the chocolate and coconut oil together in 10 second increments until smooth.
- Dip each donut in the chocolate and let the excess drip off.
- Top with Quest Peanut Butter Cup pieces.
- Place in the refrigerator for 2 minutes until solid.
